Ingredients

  • 8 sheets rice paper
  • 1 duck breast fillet
  • 1 Avocado
  • 1 large red onion
  • 8 small green salad leaves (e.g., romaine lettuce)
  • sweet and sour chili sauce (pre-made, Asian store)
  • 8 tbsp peanuts (coarsely chopped, or cashews as substitute)
  • vegetable oil (for frying)
  • Salt
  • Pepper (freshly ground)

Instructions

    Heat 2 tbsp oil in a pan and sear the duck breast seasoned with salt and pepper on the skin side until browned, then flip and continue cooking on the other side. Preheat the oven to 120°C fan. Wrap the duck breast in foil and bake for 20 minutes. Let it cool completely, then slice thinly.

    Meanwhile soak rice paper sheets between damp towels. Peel, halve, pit the avocado and cut into thin strips. Wash and dry the salad leaves. Peel the onion and slice thinly. Place a sheet of rice paper on a flat surface, lay one salad leaf in the center, top with duck slices, avocado strips, and onion slivers. Sprinkle peanuts over the filling. Fold the bottom edge up and roll tightly around the filling. Repeat with all sheets.
