Ingredients

  • 400 g rice noodles
  • Salt
  • 1 stalk leek
  • 3 Carrots
  • 2 cm fresh ginger
  • 1 Garlic clove
  • 100 g peanut kernels
  • 2 tbsp sesame oil
  • light soy sauce
  • 3 tbsp rice wine
  • pepper (from grinder)

Instructions

    Cook the rice noodles in salted water until al dente, then rinse with cold water and drain.

    Wash, peel, and trim the leek and carrots; cut into thin strips about 4 cm long. Peel and finely chop the ginger and garlic. Quickly stir-fry the ginger, garlic, and peanuts in hot oil for a minute. Add the vegetable strips and cook for 1–2 minutes, then deglaze with soy sauce and rice wine. Let it simmer briefly, then fold in the cooked noodles. Season with additional soy sauce and pepper to taste, and serve immediately.
