Ingredients

  • 100 g long grain rice
  • 200 g carrots
  • 200 g celery sticks
  • 200 g leeks
  • 1 tbsp butter
  • 200 ml vegetable broth
  • 2 tbsp chopped parsley
  • 2 chicken breast fillets
  • Salt
  • ground pepper

Instructions

    Rinse the rice under running water and bring to a boil in twice the amount of lightly salted water, then cover and simmer for about 20 minutes over low heat until cooked.

    Meanwhile, clean, wash, and finely chop the vegetables. Slice the chicken into strips.

    Heat butter in a pot and sauté the vegetables, pour in vegetable broth, add the chicken strips, bring to a boil, then cover and simmer for about 8 minutes. Season with salt and pepper.

    Serve the rice with vegetables and chicken in bowls, garnished with parsley.
