Ingredients

  • 250 g rice
  • 100 g mushrooms
  • 2 red bell peppers
  • 1 Zucchini
  • 1 Shallot
  • 1 Garlic clove
  • 4 tbsp peanut oil
  • 1 tsp freshly chopped rosemary
  • 1 tbsp freshly chopped parsley
  • 50 g olives
  • light soy sauce
  • Cayenne pepper

Instructions

    Wash the rice, steam according to package instructions, rinse and let cool. Clean and finely chop the mushrooms.

    Wash the bell peppers, halve them, clean and cut into wide strips. Wash, clean and dice the zucchini.

    Peel and finely mince the shallot and garlic. Sauté both in hot oil in a wok, add the mushrooms and bell pepper, stir for about 2 minutes, then add the zucchini and cook another ~2 minutes, mix in the rice and continue stirring for about 2 more minutes to heat through.

    Finally add the fresh herbs and olives, season with soy sauce and cayenne pepper.
