Ingredients
- 1 orange
- 100 g red rhubarb
- 3 tbsp sugar
- 1 bottle cold sparkling wine (or champagne to top up; about 0.75 L)

Squeeze the orange. Wash, peel, and cut the rhubarb into small pieces. In a pot, steam with sugar for 5-6 minutes while stirring occasionally until softened. Add the orange juice and puree finely with an immersion blender. Let the puree cool completely.

For serving, pour 1-2 tbsp of rhubarb-orange puree into each glass and top with sparkling wine. Serve well chilled.
