Rhubarb Cherry Cocktail

A refreshing mocktail featuring fresh rhubarb and cherries, perfect for a light summer drink from Spoonsparrow!

Ingredients

  • 2 stalks rhubarb
  • 300 ml apple juice
  • 1 apple
  • 2 tsp lemon juice
  • 1 Banana
  • 50 g cherries
  • 50 g Raspberries
  • 2 tbsp honey
  • 4 ice cubes

    Peel and chop the rhubarb into small pieces, then simmer with 100 ml of apple juice in a covered pot over low heat for 10 minutes until tender. Let cool. Peel the apple, quarter it, remove the core, and roughly chop the quarters; drizzle with lemon juice. Peel the banana and slice it. Arrange the sliced banana, apple pieces, cherries, and raspberries on a flat plate and freeze in the freezer for about 30 minutes.

    Blend the frozen fruit mixture, the rhubarb with its broth, honey, crushed ice, and remaining apple juice until smooth. Pour the rhubarb drink into glasses and garnish each with a cherry on a cocktail skewer.
