Red Wine Goulash with Shallots and Mushrooms

- 1 kg beef goulash
- Sea salt
- freshly ground pepper
- 1 tbsp flour
- 500 g shallots
- 4 tbsp Vegetable oil
- 2 tbsp Tomato paste
- 1 bottle dry red wine (0.75 l)
- 200 ml vegetable broth
- 400 g button mushrooms
- 1 bunch spring onions
- 2 tbsp Vegetable oil
- 1 tbsp butter
- ground anise
- 350 g wide egg noodles

Season the beef with salt and pepper, then dust it with flour. Peel and quarter the shallots.

Heat the oil in a large pot and brown the beef in batches all around. Add the shallots and cook briefly. Stir in tomato paste, pour in about 150 ml of wine, and let it reduce while stirring. Pour in more wine and repeat the reduction; then add the remaining wine and broth. Simmer covered over low heat for about two hours.

Meanwhile, clean and quarter the mushrooms. Wash, trim, and slice the spring onions diagonally into rings.

Cook the noodles according to package instructions.

About ten minutes before the noodles finish cooking, heat oil with butter in a skillet and sauté the mushrooms with the spring onions for 2–3 minutes. Season with pepper, salt, and anise.

Taste the goulash, then serve it over the noodles along with the sautéed mushrooms on plates.
