Ingredients
- 750 g red snapper fillet
- 2 limes (juice)
- 300 g canned corn
- 2 red bell peppers
- 6 shallots
- 1 tsp cane sugar
- 6 tbsp peanut oil
- 200 ml fish stock (from a jar)
- 50 g crème fraîche
- 0.5 bunch cilantro
- 1 lemon
- Salt
- Pepper

Wash the fish, pat dry, rub with lime juice, salt and pepper. Halve the peppers, remove seeds, wash, cut into thick strips. Drain the corn, peel the onions. Heat 2 tbsp oil, sauté onions, peppers and corn, sprinkle sugar, deglaze with fish stock and simmer for 7 minutes.

Heat remaining oil, fry the fish crisp on both sides for 4 minutes each. Wash cilantro, slice into strips. Stir crème fraîche into the vegetables, sprinkle cilantro, plate, place fish on top, garnish with lemon wedges.
