Red Onion Chutney

Ingredients

  • 100 g plums (or red plums)
  • 500 g red onions
  • 2 tbsp sunflower oil
  • 1 tbsp honey
  • 250 ml dry red wine
  • 75 ml white balsamic vinegar
  • 1 tsp peppercorns
  • 1 pinch cloves powder
  • 1 pinch allspice
  • 1 tsp chopped oregano
  • 2 Bay leaves
  • Salt
  • ground black pepper

Instructions

    Wash the plums, halve them, pit and cut into strips. Peel the onions, slice finely and sauté in hot oil for 1-2 minutes. Add the plums with honey, red wine, vinegar, peppercorns, cloves, allspice, oregano and bay leaves. Simmer gently on low heat, uncovered, for about 45 minutes until thickened into a chutney. If needed, add a little water and stir occasionally.

    Season with salt, pepper and vinegar to taste. Transfer to prepared jars, seal tightly and store in the refrigerator.
