Red Lentils with Bulgur

Ingredients

  • 100 g bulgur
  • 2 onions
  • 1 tbsp butter
  • 100 g Red lentils
  • 1.25 l vegetable broth
  • 3 tbsp Ajvar (ready-made paprika paste)
  • Salt
  • ground pepper
  • 1 tsp hot paprika powder
  • juice of one lemon
  • 4 tbsp chopped mint
  • 4 tbsp chopped parsley
  • lemon wedges

Instructions

    Peel and finely chop the onions, then sauté them in hot butter until translucent. Add the lentils and bulgur, stir briefly, pour in the vegetable broth, add Ajvar, salt, pepper, and paprika powder, and simmer for about 15 minutes.

    Season the stew with lemon juice, fold in the herbs, and serve.
