Ingredients
- 4 small tart apples (e.g., Cox Orange)
- 750 ml vegetable broth
- 2 tsp dried tarragon
- 400 g red lentils
- Salt
- Pepper
- 4 tbsp chopped walnuts
- 4 tbsp cold-pressed walnut oil (or argan oil, for drizzling)

Peel and halve the apples. Remove stem, blossom end, and core from each half. Slice the flesh into thin slivers. Bring vegetable broth with tarragon to a boil in a small pot. Add lentils and simmer over low heat.

After 5 minutes, fold in apple slices and continue cooking for another 5 minutes while stirring occasionally until all liquid is absorbed. Season the dish generously with salt and pepper, then stir in walnuts. Serve drizzled with walnut oil.
