Ingredients
- 200 g red lentils
- 1 onion
- 3 tbsp olive oil
- 300 ml orange juice
- 300 ml carrot juice
- 1 tsp instant vegetable broth
- Salt
- Pepper (freshly ground)
- 2 pinch cumin (ground)
- 2 tsp Curry powder
- 50 ml heavy cream
- coriander leaves (for garnish)

Rinse the lentils in a sieve. Peel and dice the onion. Heat the olive oil in a pot and sauté the onion cubes until translucent. Add the lentils and deglaze with orange and carrot juice. Season with vegetable broth, salt, pepper, cumin, and curry.

Bring to a boil and simmer covered over low heat for about 25 minutes, stirring occasionally. Remove 4 tbsp of lentils from the pot as a garnish and puree the remaining soup with a blender. Add the cream and bring to a gentle boil.

Serve the soup in deep bowls and scatter the reserved lentils on top. Garnish with fresh coriander.
