Ingredients

  • 800 g potatoes (firm‑starch)
  • 1 onion
  • 250 g red lentils
  • 400 ml Vegetable broth
  • 1 Garlic clove
  • 1 tsp freshly grated ginger
  • 1 tsp turmeric
  • Salt
  • Cayenne pepper
  • 1 bunch Coriander
  • 3 tbsp oil
  • lime slice (for garnish)

Instructions

    Peel and finely chop the garlic, then sauté it with the ginger in remaining hot oil; add turmeric and lentils, deglaze with a splash of broth.

    Gradually pour in the rest of the broth while stirring occasionally, letting it simmer for about 10 minutes until the lentils are tender yet still firm. The liquid should be fully absorbed.

    Fold in chopped coriander and season with salt and cayenne pepper. Serve together with fried potatoes and garnish with lime slices.
