Red Cabbage Soup with Walnuts

Now brings color to the plate! This hearty red cabbage soup is enriched with sweet apples and crunchy walnuts for a comforting flavor that warms the soul.
Ingredients
- 400 g red cabbage
- 1 apple
- 60 g walnut kernels
- 30 g Butter
- 2 tsp raw cane sugar
- 2 tbsp balsamic vinegar
- 500 ml vegetable broth
- 200 ml soy cream
- Salt
- Pepper
- 1 pinch cinnamon

Clean, wash, and slice the red cabbage into strips. Peel the apple, remove the core, and dice it small.

Heat the butter in a pot and caramelize the sugar in it. Deglaze with vinegar, add the apple cubes and walnuts, and sauté while stirring for about 2 minutes.

Add the cabbage and broth. Simmer gently for about 15 minutes. Then puree with an immersion blender, pour in the soy cream, and bring to a brief boil again.

Season the soup with salt, pepper, and cinnamon, taste, and serve sprinkled with the remaining walnuts.
