Red Cabbage Salad with Apple

Red cabbage salad with apple from Spoonsparrow is a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients

  • 700 g red cabbage (1 small head)
  • 1 tbsp salt
  • 2 tart apples
  • 1 tbsp Apple cider vinegar
  • 3 tbsp Lemon juice
  • 2 tbsp Orange juice
  • 4 tbsp rapeseed oil
  • 0.5 tsp cumin seeds
  • freshly ground black pepper

Instructions

    Quarter the cabbage, remove the core and finely shred it. Mix with salt and combine well; let it rest for 15–20 minutes, stirring occasionally.

    Peel, quarter, core the apples and cut into thin sticks. Whisk together vinegar, lemon juice, orange juice, cumin, pepper and oil to make a dressing.

    Rinse the cabbage in a sieve and drain. Then combine it with the dressing and apple sticks in a large bowl. Season to taste, plate on dishes and serve.
