Red Berry Pudding with Vanilla Sauce

Ingredients
- 400 ml milk
- 200 ml heavy cream
- 60 g sugar
- 1 stick vanilla beans (the seed)
- 5 egg yolks
- 600 g mixed berries (fresh or frozen)
- 300 ml cherry juice
- 60 g powdered sugar
- 2 tbsp Cornstarch
- 1 sprig mint (for garnish)

For the vanilla sauce, split a vanilla bean lengthwise and scrape out the seeds with a knife. In a metal bowl whisk together milk, heavy cream, sugar, vanilla seed, and egg yolks, then place over a hot water bath to "pull the rose." Heat the mixture constantly until it thickens just before boiling. Chill in the refrigerator for about 2 hours.

For the red berry pudding, wash and trim the berries, cutting them small if desired. Bring cherry juice with powdered sugar to a boil. Dissolve cornstarch in a little water and stir into the boiling juice to thicken. Add the berries, bring to a brief simmer, then chill for another 2 hours.

Just before serving, stir together the pudding and vanilla sauce. Pour the sauce into a small pot and serve the pudding in deep bowls. Wash the mint, dry it, shake off excess water, and pluck leaves. Garnish the red berry pudding with mint leaves.
