- 1 kg red beets
- 1 tsp cumin seeds
- 2 tbsp lemon juice
- 2 tbsp Orange juice
- 1 tbsp honey
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 150 g goat fresh cheese
- 80 g walnut kernels

If necessary, wash the red beets and place them whole in a steamer basket. Sprinkle with cumin and steam in a covered pot for about 45 minutes until tender. Let cool, peel, slice into rounds, and arrange on four plates.

Whisk together lemon juice, orange juice, honey, oil, and 1–2 tbsp hot water to make the dressing. Season with salt and pepper, taste, and drizzle over the beet slices. Arrange small portions of goat cheese on top and place one walnut half on each.
