The Red Beet Herb Salad from Spoonsparrow is healthy and truly delicious.

Ingredients

  • 800 g red beet
  • 4 tbsp olive oil
  • 3 tbsp apple cider vinegar
  • 2 tbsp Capers (jarred)
  • 1 tbsp honey
  • Salt
  • Pepper
  • ground cumin
  • 1 bunch chives (≈20 g)
  • 3 sprigs dill

Instructions

    Wash the red beets and steam them for about 50 minutes until tender. Let them cool slightly, peel, and cut into bite‑sized strips. Toss with olive oil, apple cider vinegar, capers, honey, salt, pepper, and cumin; allow to cool to lukewarm.

    Meanwhile wash the chives and dill and shake dry. Trim the dill tips and cut the chives into ~5 cm pieces. Mix the herbs into the salad just before serving.
