Ingredients

  • 400 g red beet (pre-cooked and peeled)
  • 400 g goat cheese roll
  • 24 large spinach leaves (or giant basil)
  • 80 g pecans
  • 1 lemon (juice)
  • 1 tsp liquid honey
  • Salt
  • Pepper
  • 1 pinch ground ginger
  • 1 pinch cinnamon
  • 2 tbsp Rapeseed oil
  • coarse sea salt (for sprinkling)

    Slice the red beet bulbs into 2 cm thick rounds. Slice the goat cheese roll similarly. Wash and drain the spinach leaves. Toast the pecans in a non-stick pan without fat, then set aside. Mix lemon juice with honey and season with salt, pepper, ginger, and cinnamon. Heat the oil in a pan. Quickly sear the beet slices. Remove from heat and drizzle with two thirds of the dressing. Place one beet slice on top of a cheese slice, drizzle with dressing, add a spinach leaf, then layer another round of beet, cheese, and spinach. Finish with a beet layer. Sprinkle with sea salt and serve garnished with pecans.
