Ingredients

  • 250 g raw red beet
  • 1 walnut‑sized piece ginger
  • 250 ml vegetable broth
  • 125 g whipping cream
  • Salt
  • pepper (from grinder)

Instructions

    Peel the beet and ginger. Cut the beet into pieces and slice the ginger into thin strips.

    Add the vegetable broth and beet to a pot and simmer for about 20 minutes. Blend with the cream and season with salt and pepper.

    Reheat, serve in soup cups, and sprinkle with sliced ginger.
