Red Beet Avocado Salad

Ingredients
- 2 ripe avocados
- 2 tsp lemon juice
- 16 shrimp (or king crab tails)
- 2 tbsp butter
- 400 g small red beets
- 1 tsp vinegar
- 1 tsp cumin
- 4 shallots
- 1 bunch parsley
- 2 tbsp balsamic vinegar
- 4 tbsp Vegetable oil
- Salt
- Pepper
Instructions

Wash the red beets thoroughly under running water and simmer them in salted water with vinegar and cumin for 40 minutes over low heat, covered.

Briefly brown the shrimp tails in butter on all sides. For the sauce, peel and finely chop the shallots. Wash and finely chop parsley leaves. Whisk together vinegar, oil, salt, pepper, then mix in the shallot and parsley.

Peel the avocados, halve them, remove the pits, and cut each half into fan-shaped slices. Drizzle immediately with lemon juice. Peel the red beets, slice them, and arrange on plates. Distribute avocado fans and shrimp tails over the beet slices and drizzle with the sauce.
