Ingredients

  • 300 g anchovy fillets
  • 100 g capers
  • 10 garlic cloves
  • 100 g butter
  • 200 ml olive oil
  • 100 g olives
  • fennel
  • carrots
  • artichokes
  • bell peppers
  • spring onions
  • cherry tomatoes
  • radishes
  • cauliflower

Instructions

    Clean, wash, peel the vegetables as desired and cut into strips or pieces. Arrange them on a platter.

    Rinse anchovy fillets under running water and pat dry. Peel garlic cloves and finely chop. Rinse capers under running water and drain well. Slice olives thinly. Cut anchovies into small pieces. In a pan melt butter over low heat. Gently sauté the chopped garlic, never browning it! Gradually add olive oil, keeping the heat very low and stirring frequently to warm gently. Ensure the garlic does not burn. Remove from heat and add anchovies, olives, and capers. Smash everything with a fork. Return to the stove over gentle heat, stir until a creamy sauce forms. If the sauce is not creamy enough for your taste, blend it briefly.
