Raw Stuffed Tomatoes

Raw stuffed tomatoes from Spoonsparrow impress even salad skeptics and are a striking starter or side dish.

Ingredients

  • 8 medium tomatoes
  • 1 tbsp oil
  • juice of ½ lime
  • 2 tsp Dijon mustard
  • Salt
  • freshly ground pepper
  • 2 Celery stalks
  • 125 g white mushrooms
  • 40 g chopped pistachios
  • a bit of romaine lettuce (for serving)

Instructions

    Wash the tomatoes and cut off a lid from each. Hollow out the tomatoes. Pat the insides dry with kitchen paper.

    Whisk together oil, lime juice, mustard, salt, and pepper.

    Rinse the celery and finely chop it. Clean and thinly slice the mushrooms. Mix the celery, mushrooms, and mustard dressing. Fold in 30 g of pistachios.

    Season the tomatoes with a little salt and pepper. Fill them with the celery-mushroom salad. Arrange the raw stuffed tomatoes on a bed of romaine lettuce and sprinkle with the remaining pistachios before serving.
