Rauke Salad

Ingredients
- 2 tbsp oil
- 4 pork tenderloin steaks (100 g each)
- 1 Garlic clove
- 2 sprigs oregano
- 1 red chili pepper
- Salt
- freshly ground pepper
- 200 g arugula
- 2 tbsp white wine vinegar
- Salt
- Pepper
- 4 tbsp olive oil
- 40 g Parmesan

Heat oil and fry pork tenderloin steaks for 8-10 minutes. Peel garlic. Strip oregano leaves from stems. Finely chop chili pepper. In the last minutes press garlic into the pan, add oregano and chili. Season meat with salt and pepper. Set aside warm.

Rinse arugula, trim and dry. Whisk vinegar with salt, pepper and olive oil. Toss arugula in dressing. Plate steaks with arugula and grate parmesan over top.
