The Ratatouille from Spoonsparrow is a healthy and flavorful dish made with fresh ingredients such as eggplant, bell peppers, tomatoes, and aromatic herbs.

Ingredients

  • 2 Eggplants
  • 4 shallots
  • 4 bell pepper halves (red and yellow)
  • 1 Garlic clove
  • 150 g cherry tomatoes
  • 3 tbsp olive oil
  • Sea salt
  • Pepper
  • 1 herb bundle (2 thyme sprigs, 1 rosemary sprig; 1 oregano stalk)

Instructions

    Wash, clean, and cut the eggplants into pieces. Peel the shallots and slice them into rings. Wash, halve, clean, and dice the bell peppers. Peel and finely chop the garlic. Wash and halve the tomatoes.

    Sauté the shallots and garlic briefly in hot oil. Add the eggplant and bell peppers and sauté for 4-5 minutes. Stir in the tomatoes and season with salt and pepper. Place the herb bundle on top, cover, and simmer gently for about 10 minutes. If needed, add a little water.

    Finally remove the herb bundle again and adjust seasoning.
