Rapunzel with beetroot, grapes, capers and goat cheese is a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.
Ingredients
- 400 g beetroot
- 250 g lamb's lettuce
- 1 Red Onion
- 250 g red grapes
- 300 g goat cheese
- 3 tbsp balsamic vinegar
- 1 tbsp Lemon Juice
- 1 tsp Honey
- 6 tbsp Olive oil
- 1 tbsp capers
- Salt
- black pepper (freshly ground)

Wash the beetroot and steam it for about 35 minutes until cooked. Peel, let cool, then cut into pieces. Wash and dry the lamb's lettuce. Peel the onion, halve it and slice into strips. Wash the grapes and halve them. Crumble the cheese.

Distribute all prepared salad ingredients onto plates. Whisk together the balsamic vinegar, lemon juice, honey and olive oil. Add the capers and season with salt and pepper. Drizzle over the salad and serve.
