Ingredients

  • 2 handfuls herbs (e.g., dill, parsley, wild garlic, chives)
  • 100 g Arugula
  • 3 tbsp fruit vinegar
  • 1 tbsp Medium-hot mustard
  • 3 tbsp grape seed oil
  • 200 g ricotta
  • Salt
  • Pepper
  • 350 g crumbly cream cheese
  • a splash lemon juice
  • 400 g radishes

Instructions

    Wash herbs, shake dry and pluck leaves. Set aside some for garnish and put the rest in a blender. Wash arugula, clean and spin dry. Add 1/3 of the arugula to the herbs in the blender, then add vinegar, mustard, oil and about 50 g ricotta; blend until smooth and season with salt and pepper. Mix the remaining ricotta with crumbly cream cheese and season with lemon juice, salt and pepper.

    Wash radishes, clean and slice thinly. Arrange on four plates and place dollops of ricotta‑cream cheese on top. Sprinkle with herbs and arugula and drizzle with the herb sauce.
