Quinoa Strawberry Treat

Ingredients

  • 40 g quinoa
  • 4 fresh strawberries
  • 60 g dried strawberries
  • 250 g flour
  • 2 tsp Baking powder
  • 50 g sugar
  • 1 tsp organic lemon zest
  • 50 g soft butter
  • 175 g coconut yogurt
  • flour (for working)
  • 1 egg yolk
  • 2 Tbsp whipping cream

Instructions

    Rinse the quinoa in a sieve and cook it for 15-20 minutes in just under twice that amount of boiling water. Wash, trim, and chop the fresh strawberries. Mix with the dried strawberries. Drain any excess water from the cooked quinoa and let it evaporate.

    Preheat the oven to 200°C (fan).

    Knead the flour with baking powder, sugar, lemon zest, soft butter, and enough yogurt until the dough is smooth. Knead only as long as necessary, incorporating the quinoa and strawberry mixture during kneading.

    Roll out the dough on a floured surface to about 1.5 cm thickness and cut into 10-12 squares (about 6 cm sides). Place them on a baking tray lined with parchment paper.

    Whisk the egg yolk with the whipping cream and brush it over the scones. Bake in the hot oven for about 15 minutes until golden brown.

    Remove from the tray and cool on a wire rack.
