Quinoa Quark Bake
A perfect fitness recipe – quick to make, healthy, and with fresh ingredients.
Ingredients
- 50 g quinoa
- 50 g sheep cheese
- 250 g quark
- 150 g mozzarella
- 50 g Parmesan (freshly grated)
- 1 tbsp parsley (finely chopped)
- 1 tbsp Lemon Juice
- 1 bundle radishes
- 0.5 bundle spring onions
- 150 g spinach
- 3 eggs
- butter (for the pan)
- bread crumbs (for the pan)
- Salt
- pepper (ground)
Instructions

Boil quinoa in about 250 ml water and simmer on low heat for 20 minutes covered, then stir in parsley.

Thaw spinach.

Mash sheep cheese and mix with quark, lemon juice, salt, and pepper until smooth.

Cut mozzarella into roughly 1 cm cubes and combine with parmesan.

Grease a 25 cm loaf pan with butter and line with bread crumbs.

Clean radishes, wash, set aside some, dice the rest coarsely.

Wash spring onions, trim, and finely chop.

Finely chop spinach.

Drain quinoa in a sieve, fold into quark mixture.

Separate eggs; whisk yolks into quark mixture, then add cheese blend and vegetables.

Beat egg whites with a pinch of salt until stiff peaks form, fold in, pour into pan, smooth top, and bake at 200°C for about 40 minutes until golden yellow.

Remove, slice thickly from the pan, garnish with halved radishes, and serve.
