Quince juice from Spoonsparrow is child-friendly and unforgettable good.

Ingredients

  • 1.5 kg quince
  • 2 Vanilla Beans

Instructions

    Wash, peel, quarter the quinces and remove the seeds. Roughly cube them. Split each vanilla bean lengthwise and scrape out the seeds.

    Place the quinces, vanilla beans and their seeds in a pot with about 2 liters of water. Cook the quinces over medium heat for 30–40 minutes until soft.

    Strain the mixture through a muslin cloth. Transfer the juice to a sieve and let it drain overnight if possible.

    Bring the quince juice to a brief boil, pour hot into bottles and seal immediately. Place the filled bottles in a pot, cover with hot water, bring to a boil and simmer for twenty minutes. Store cooled and dark; the juice keeps up to one year.
