Quince Cream with Grapes

Ingredients

  • 600 g quince
  • 1 vanilla pod
  • 200 g light seedless grapes
  • 100 ml apple juice
  • 2 tbsp honey
  • 1 tbsp Lemon Juice
  • 150 ml buttermilk
  • 15 g almond slivers (1 tbsp)
  • ground nutmeg

Instructions

    Wash the quinces and simmer in boiling water for about 50 minutes until soft.

    Meanwhile, split the vanilla pod lengthwise and scrape out the seeds. Wash the grapes and pat them dry.

    Drain the quinces, peel, halve, core, and roughly cube the flesh.

    Blend the quince cubes with vanilla seeds, apple juice, honey, and lemon juice in a blender until smooth. Spoon the puree into 4 glasses and pour buttermilk over it.

    Sprinkle the grapes and almonds on top and dust with nutmeg.
