Ingredients
- 4 quines
- 0.5 lemon (juice)
- 2 vanilla pods
- 150 g brown sugar
- 1 clove of nutmeg
- 250 ml Water
- 150 ml dry white wine

Peel, core, and cut the quines into wedges. Place them in a bowl and drizzle with lemon juice. Split the vanilla pods lengthwise and scrape out the seeds. Combine the vanilla, sugar, nutmeg, water, and wine in a pot and bring to a boil.

Cover the quince wedges and simmer for about 30 minutes until tender but not falling apart (cooking time may vary). Serve warm as a dessert or pour immediately into a glass, seal tightly, and let cool.
