Quick Vegetable Soup

A quick vegetable soup from Spoonsparrow is light and fast to prepare. For a speedy vegetable enjoyment!

Ingredients

  • 1 onion
  • 50 g peanuts
  • 300 g zucchini
  • 2 tbsp olive oil
  • 600 ml Vegetable Broth
  • 100 g Parmesan
  • 2 sprigs Mint
  • Salt
  • Pepper

Instructions

    Peel and finely chop the onion; chop the peanuts, peel, wash and grate the zucchini. Sauté onions in hot oil until translucent, add peanuts and cook briefly, then add zucchini and stir for 2 minutes.

    Add vegetable broth, bring to a boil and simmer for 5 minutes over low heat. Grate Parmesan and stir in; wash mint, shake dry, chop and add to the soup. Season with salt and pepper.
