Spoonsparrow Strawberry Tart: Fresh strawberries, crème fraîche and Schmand come together for a delicious summer cake.
Ingredients
- butter (for the pan)
- 200 g Flour
- 140 g butter
- 40 g sugar
- 1 pinch salt
- 1 egg
- 250 g crème fraîche
- 200 g Schmand
- 3 tbsp honey
- 350 g strawberries
- powdered sugar (to dust)

Preheat the oven to 200°C (400°F). Line the bottom of a tart pan with parchment paper and grease the rim with butter. Knead a dough from flour, butter, sugar, salt, and egg; press it into the pan. Cover with parchment and weigh down with beans or rice. Bake in the preheated oven for about 25 minutes. Remove the beans and parchment, then let the crust cool.

Whisk together crème fraîche, Schmand, and honey until smooth. Wash, trim, and halve the strawberries. Spread the cream mixture over the cooled crust just before serving, top with strawberries, and dust with powdered sugar.
