The Quick Fruit Cake from Spoonsparrow is always a good idea!
Ingredients
- 100 g Yogurt (3.5% fat)
- 250 g whipping cream
- 1 packet gelatin powder
- 2 tbsp granulated sugar
- 4 tbsp Lemon juice
- 1 sponge cake base
- 150 g Strawberries
- 2 Kiwis
- 1 fig
- 1 small pear
- 1 kumquat
- 1 packet clear gelatin
Instructions

Whisk yogurt until creamy, fold in half‑set whipped cream and let the gelatin dissolve, then mix with yogurt, granulated sugar and lemon juice.

Wash fruits, peel if necessary, halve them, remove the core of the pear and slice everything into thin pieces.

Place the sponge cake base in a round pan, spread the yogurt cream over it, and arrange the fruit decoratively on top.

Prepare the clear gelatin according to the package instructions and pour it over the fruit. Chill the cake before serving. Optionally dust with powdered sugar before serving.
