Quick Fish Pan

The quick fish pan from Spoonsparrow is the ideal light dinner after a long day!

Ingredients

  • 4 cod fillets (200 g each)
  • 2 onions
  • 2 large tomatoes
  • 4 tbsp olive oil
  • 80 g black olives (pitted)
  • Salt
  • Pepper
  • 0.5 tsp dried thyme
  • 0.5 tsp Dried oregano
  • 0.5 bunch Parsley (10 g)

Instructions

    Rinse fish fillets under cold water, pat dry and cut into bite-sized pieces. Peel the onion and slice into 1/2 cm thick rounds. Wash, core, and cube the tomatoes roughly.

    Heat oil in a pan and sauté onions over medium heat for about 5 minutes. Add fish pieces, tomato cubes, and olives. Season with salt, pepper, and herbs. Simmer on low heat for about 10 minutes.
