The healthy and quick chickpea salad from Spoonsparrow is delicious again and again!

Ingredients

  • 250 g red cherry tomatoes
  • 250 g yellow cherry tomatoes
  • 1 cucumber
  • 250 g chickpeas (drained weight; can)
  • 10 g parsley (0.5 bunch)
  • 50 g feta
  • 1 lemon
  • 2 tbsp honey
  • 3 tbsp balsamic vinegar
  • Salt
  • Pepper
  • 3 tbsp olive oil

Instructions

    Wash cherry tomatoes, cut them into small pieces and put them in a bowl. Wash cucumber, peel it, cut it into cubes and mix with the tomatoes.

    Drain chickpeas in a sieve, rinse cold and mix with the tomato-cucumber mixture.

    Wash parsley, shake dry and chop. Also mix under the tomato mixture.

    Crumble feta, add to the vegetables and mix well.

    Squeeze lemon juice and mix it with honey and balsamic vinegar for the vinaigrette. Whisk in olive oil and season with salt and pepper. Mix vinaigrette with the quick chickpea salad.
