Ingredients
- 10 g butter
- 125 g spelt whole‑grain flour
- 250 g wheat flour type 1050
- 1 tsp salt
- 1.5 tsp Baking Powder
- 1 tsp Baking Soda
- 2 tbsp raisins
- 300 ml buttermilk

Brush six small terracotta pots with butter and line the rim of each with a strip of parchment paper. In a bowl combine the spelt whole‑grain flour, wheat flour, salt, baking powder, baking soda and raisins. Press a shallow well in the center and pour in the buttermilk. Knead into a smooth dough that lifts from the bowl’s edge; if too soft add more flour, if too dry knead in more milk.

Divide into six equal pieces and roll each on a floured surface into rolls. Place them in the pots and bake in a preheated oven at 200 °C (fan: 180 °C; gas: level 3) for about 20 minutes or until a skewer comes out clean. Cool on a wire rack.
