Quesadillas with Brie and Guacamole

Ingredients

  • 1 Mango
  • 3 tbsp mango juice
  • 5 g parsley (0.25 bunch)
  • 150 g Brie (1 piece)
  • 1 Avocado
  • 100 g cream cheese preparation (0.2% fat)
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper
  • 1 red chili pepper
  • 2 Tomatoes
  • 2 tortilla flatbreads

Instructions

    Peel the mango, remove the flesh from the pit and cut into pieces; blend with mango juice.

    Wash parsley, dry, strip leaves, roughly chop; cube the cheese.

    Halve the avocado, remove seed, scoop flesh, mash with a fork. Mix in cream cheese and lemon juice, season with salt and pepper.

    Wash chili pepper, halve, deseed, finely chop. Wash tomatoes, halve, trim stems, cut into fine cubes. Add to avocado dip (guacamole) and mix well.

    Heat tortilla flatbreads in a grill pan over medium heat until browned. Spread mango puree on each, top with Brie and parsley. Fold together, cut in half, arrange on four plates and serve with guacamole.
