Quark Strawberry Tartlets

Ingredients
- 120 g flour
- 60 g Butter
- 50 g powdered sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 1 egg yolk
- 250 g strawberries
- 125 g quark
- 2 tbsp honey
- 5 tbsp whipping cream
Instructions

Knead all dough ingredients into a smooth dough, shape into a ball, wrap in cling film and refrigerate for about 30 minutes.

Puree half of the strawberries, slice the other half into thin rounds.

Whisk quark and honey together until creamy, beat the cream to stiff peaks, fold in the strawberry puree and quark mixture. Chill.

Roll out the dough and line tartlet tins with it.

Bake in a preheated oven at 200°C (middle rack) for about 15 minutes until golden brown, remove and cool. Fill with the cream and garnish with strawberries.
