Quark Dumplings with Spelt and Carrots

Ingredients
- 150 g spelt
- 3000 ml water
- 400 g Carrots
- 1 tbsp curry powder
- 1 yellow bell pepper
- 1 onion
- fresh mint
- 500 g Low-fat quark
- 200 ml whipping cream
- 3 eggs
- 100 g flour
- 120 g semolina
- Salt
- Pepper
- 40 g Butter
Instructions

Rinse the spelt and soak it in water for at least 6 hours.

Whisk the quark with the eggs until creamy, add the flour, semolina, and a pinch of salt, then let it sit for 30 minutes to thicken.

Peel and wash the bell pepper and carrots. Cut the carrots into bite-sized pieces, dice the pepper, and slice the onion into rings.

Heat some butter in a pan and sauté the onions. Add the carrots and pepper, season with salt and pepper, and continue cooking for 20-25 minutes until softened.

In another pot, heat some butter, add the spelt, pour in a little soaking water, season with salt and pepper, and simmer for 15 minutes.

Using a spoon, scoop out dumplings from the quark mixture and drop them into boiling water. Let them cook for 12 minutes.

Add the cream to the carrot mixture, stir in the curry powder, adjust seasoning if needed. Plate the quark dumplings, serve with the carrot mixture and spelt.
