Ingredients

  • 4 quails (prepped)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp liquid honey
  • 4 tbsp dark balsamic vinegar
  • 300 g wild rice
  • 2 red apples
  • 2 stalks celery
  • 30 g Butter

Instructions

    Preheat the oven to 200°C (400°F) with upper and lower heat.

    Wash quails inside and out, pat dry, season with salt and pepper. Mix honey with balsamic vinegar and brush onto quails. Place breast-side down on a parchment-lined baking sheet and roast in preheated oven for 25-30 minutes. Flip quails halfway through and continue brushing with honey‑vinegar mixture. Meanwhile cook rice in 600 ml water with a pinch of salt.

    Wash apples, quarter, core, and cut into pieces. Wash celery, trim, and slice thinly. Melt butter in a pan, sauté apple pieces with celery slices for about 2 minutes. Add cooked rice, mix well, season with salt and pepper, and spread on a platter.

    Place roasted quails on top of the rice mixture and serve immediately.
