- 1 onion
- 300 g bratwurst mixture
- 50 g fresh breadcrumbs
- 1 orange (juice and zest)
- 2 EL dried cranberries (or lingonberries)
- 75 g pine nuts (coarsely chopped)
- 2 EL finely chopped sage leaves
- Salt
- ground pepper
- 1.8 kg turkey breast fillet
- 1 egg
- 300 g flour
- 150 g cold butter
- a pinch of salt

Peel and finely chop the onion, then sauté in hot butter until translucent. In a bowl mix with the bratwurst mixture, breadcrumbs, orange juice and zest, cranberries, pine nuts, sage, salt, and pepper.

Make a slit along the length of the turkey breast without cutting through, open it like a book, gently flatten, place filling in the center, close, and tie with kitchen twine. Place roast in a greased pan and bake at 200°C for 1.5 hours.
