Ingredients
- 1 Shallot
- 1 Garlic clove
- 800 g Hokkaido pumpkin
- 2 tbsp sunflower oil
- 600 ml Vegetable Broth
- Salt
- white pepper
- 20 g ginger (piece, about 3 cm)
- 200 ml heavy cream
- 2 tbsp crème fraîche

Peel and chop the shallot and garlic. Clean, wash, halve the pumpkin, remove seeds and fibers, then cut the flesh into pieces. Peel and finely slice the ginger.

Heat oil in a pot. Sauté the shallot and garlic over medium heat for 2 minutes. Add the pumpkin and ginger and sauté for another minute. Season with salt and pepper, pour in the broth, bring to a boil, then cover and simmer on low for about 25 minutes. Pour in 100 ml cream, puree the soup, and season with salt and pepper.
