Pumpkin Soup with Kale

Ingredients

  • 2 carrots
  • 300 g pumpkin flesh
  • 2 Potatoes
  • 3 tomatoes
  • 1 onion
  • 2 Garlic cloves
  • 300 g Kale
  • 2 tbsp butter
  • 1 l vegetable broth
  • Salt
  • ground pepper
  • Vinegar

Instructions

    Peel the carrots and dice them into small cubes. Dice the pumpkin flesh. Peel the potatoes and dice them as well.

    Briefly blanch the tomatoes, cool them, peel, quarter, seed, and dice them. Peel and chop the onion and garlic. Strip the kale from its stems, wash it, shake off excess water, and cut it into small pieces.

    Heat butter in a pot and sauté the onions and garlic until translucent. Add the potatoes, pumpkin, and carrots and cook for a few minutes, then pour in the broth, cover, and simmer for about 20 minutes. Roughly mash the stew with a potato masher (some larger chunks may remain). Season with salt and pepper, add the tomatoes and kale, and simmer for another 5 minutes. Taste with vinegar and serve.
