Pumpkin Seed Bundt Cake

- 4 eggs
- 200 g powdered sugar
- 125 ml pumpkin seed oil
- Salt
- 280 g flour
- 0.5 packet Baking powder
- 100 g roasted pumpkin seeds
- powdered sugar (for dusting)

Preheat the oven to 180°C (350°F) with upper and lower heat. Butter a bundt pan and dust it with flour.

Separate the eggs. Beat the yolks with the powdered sugar until fluffy. Add the oil, a pinch of salt, and 125 ml water; continue beating. Mix the flour with the baking powder and pumpkin seeds, then fold into the batter. Whisk the egg whites to stiff peaks and fold them in last. Pour the batter into the prepared pan, smooth the top, and bake for 50-60 minutes, checking with a toothpick.

Remove the finished cake from the oven, turn it out onto a wire rack, and let it cool. Dust with powdered sugar before serving.
