Ingredients

  • 500 g pumpkin
  • 2 red onions
  • 2 oranges
  • 2 EL oil
  • 250 ml orange juice
  • 2 EL mustard seeds
  • Salt
  • Pepper
  • 100 ml white wine vinegar
  • 100 g canning sugar

Instructions

    Peel and seed the pumpkin, then cut into small cubes. Peel the onions, halve them, and slice into rings. Peel the oranges so that all white pith is removed, then cut the orange flesh into pieces.

    Sauté the onions and pumpkin in hot oil over medium heat until softened. Add orange juice, mustard seeds, salt, and pepper; simmer for 20 minutes on medium heat.

    Stir in the orange pieces, vinegar, and canning sugar; reduce for another 25 minutes until thickened. Adjust seasoning if needed, then fill prepared jars and seal.
