Ingredients
- 1 kg pumpkin (muskmelon pumpkin)
- 1 vanilla pod
- 2 cm fresh ginger
- 4 cloves of mace
- 1 star anise
- 2 Cinnamon sticks
- 300 g sugar
- 500 ml dry white wine

Peel, seed the pumpkin and cut the flesh into strips with a vegetable peeler. Split the vanilla pod lengthwise and crosswise. Peel and finely grate the ginger. Place the pumpkin and ginger in well-flushed jars. Bring the sugar with 300 ml water to a boil until dissolved.

Add the white wine and spices, let steep briefly, then pour the hot liquid over the pumpkin. Seal the jars and simmer in a large pot with 1 l hot water for 20 minutes. Store the jars in a dark, cool place.
