Ingredients
- 1 kg peeled pumpkin
- 100 ml wine vinegar
- 350 g sugar
- Salt
- 3 sticks cinnamon
- 1 tsp cloves
- 1 piece fresh ginger (walnut-sized)

Dice the pumpkin and add enough water to just cover it. Add the wine vinegar, sugar, salt, cinnamon, cloves, and thinly sliced ginger. Bring to a boil and simmer slowly for 6-8 minutes.

Afterward, pour hot compote into smaller canning jars while still hot and seal them tightly. Store in the refrigerator for 3-4 weeks. The pumpkin tastes excellent with hearty roasts.
