Ingredients
- 3 tbsp paprika powder
- 20 g salt
- 20 g sugar
- 1 tbsp Ground cumin
- 1 tbsp black pepper (ground)
- 1 tbsp garlic granules
- 1 tbsp cayenne pepper
- 2 tbsp Dijon mustard
- 2 kg pork shoulder roast
- 3 tbsp vegetable oil

Preheat the oven to 120 °C (250 °F) with upper and lower heat. Mix paprika, salt, sugar, cumin, pepper, garlic and cayenne with mustard in a bowl. Rinse the meat, pat dry, and rub with the spice mixture. Place in an oiled roasting pan and bake for about 1 hour.

Afterward brush the roast all over with the remaining oil and pour enough water to cover the bottom of the pan. Cover with foil and bake for at least 6 ½ hours (or longer). Then pull apart with two forks and serve.
